Mom's Special Fruit Salad

Mom's Special Fruit Salad
1 (9-ounce) carton vegan whipped topping (such as Soyatoo or homemade)
1 small box vegan instant pistachio pudding or homemade (recipe below)
1 can crushed pineapple with juice
1 cup vegan marshmallows or vegan marshmallows cream
1/2 cup chopped nuts of your choice
1/2 cup raisins or grape halves
1 or 1/2 flaked/shredded coconut
1 cup maraschino cherries
Optional:
1/2 cup strawberries, diced
1 banana, sliced
1/2 cup mandarin oranges, sliced

1. Combine the whipped topping and pudding.
2. Add pineapple with juice and raisins or grapes, strawberries, banana, mandarin oranges, and maraschino cherries.
3. Stir in vegan marshmallows, coconut, and nuts.
4. Chill in refrigerator for about 4 hours or overnight.
5. Serve and enjoy!

Pistachio Pudding
1 ounce pistachio paste
1/2 cup vegan sugar
2 tablespoons cornstarch
1/8 teaspoon salt
2 cups plant milk
2 egg substitutes or 1/2 silken tofu
2 tablespoon vegan butter, softened
1 teaspoon vanilla extract
1/2 cup finely chopped pistachio nuts

1. Pour plant milk into a 2 qt sauce pan and place over medium heat. Whisk in the pistachio paste and stir until the heat dissolves the paste into the plant milk.

2. Combine your dry ingredients (sugar, cornstarch, salt) in a separate bowl. Slowly whisk into plant milk immediately after pistachio paste has dissolved. Stir constantly, until mixture thickens and begins to boil.

3. In another bowl, scramble the 2 egg substitutes or 1/2 silken tofu. Then temper the pudding, by bringing 1/2 cup of the thickened pudding and combine it the egg substitutes or 1/2 silken tofu. Once combined, immediately pour mixture back into the pudding that's in the sauce pan. Allow to boil for 1 minute, whisking all the while. After the one minute, remove from the heat.

Add the butter, vanilla and chipped pistachios. Mix thoroughly. Pour into dessert cups and chill for at least 2 hours.

NOTE: This is homemade pudding, so expect to get "pudding skin". This skin cannot hurt you. Simply stir into the rest of the non-skinned pudding.
