Vegan Foods, Part 2
This is a list of the variety of foods and drinks that plants & grains can make including animal product substitutes. Including recipes, suggestion, tips, and meal ideas. Click the header links for more information and for the recipes, suggestions, & tips.

List of unrefined sweeteners:
Dry sweeteners:

  • Cane sugar (unrefined sugarcane or refined without using animal bones)
  • Beet sugar
  • Date sugar
  • Stevia powder (can also be found in whole leaf or liquid form)
Liquid sweeteners:
  • 100% Fruit juice concentrate
  • Agave nectar
  • Barley malt syrup
  • Brown rice syrup

Egg substitutes

In baking:

  • Egg substitute/replacer - such as Orgran's No Egg substitute mix or Ener-G Egg Replacer.
  • Flax seed - egg replacer: 2 Tablespoons flax seed powder + 3 Tablespoons water = 1 egg (let sit a few minutes before adding to baking)
  • Psyllium - egg replacer: 1 Tablespoon Psyllium seed husks + 2 Tablespoons water = 1 egg (the longer they sit in water the "eggier" they become)
  • Applesauce - egg replacer: 3 Tablespoons applesauce = 1 egg (when a fruit flavor is acceptable)
  • Banana - egg replacer: 1/2 banana blended or mashed well = 1 egg (when a fruit flavor is acceptable)
  • Tofu - 1/4 cup blended soft or silken tofu = 1 egg
  • Tahini - thicker when raw, more egg like when diluted with water and stirred vociferously
  • Whole peanut butter see Tahini
  • Eggless Binder Powder: In most cases, this mixture should be whisked with a water-based wet ingredient like plant milk prior to going into the main recipe. This is important so the Eggless Binder incorporates into the recipe mixture as much as possible. Dough made with Eggless Binder should not sit any longer than is absolutely necessary before going into the oven for baking. The recipe below is for a large batch that can be used for many recipes.
    2 ½ cups arrowroot powder or tapioca starch
    ½ cup non-aluminum baking powder
    1 Tablespoon guar gum powder or xanthan gum powder
    Whisk together the arrowroot powder or tapioca starch, baking powder and guar gum powder or xanthan gum powder in a large mixing bowl. Transfer this mixture to a glass jar and shake vigorously so it's thoroughly mixed. Label the jar accordingly.

  • For egg whites: 1 tablespoon of milled flax seed with 3 tablespoons of water for each egg white you need, mix well, let sit for 1 to 2 minute.

Replacing Eggs

In cooking:
  • Tofu - can be used to make scrambled 'eggs', benedicts, omelets, boiled 'eggs', 'egg' drop soup, 'egg' salad, deviled 'eggs', poached 'eggs', etc when cooked accordingly.
  • Chickpeas - can be used to resemble scrambled 'eggs'.
  • Potatoes - can be used to resemble scrambled 'eggs' and such.
