Mom's Special Cranberry Dip

Mom's Special Cranberry Dip
1-2 (8 oz) package vegan cream cheese, softened
2 cups fresh cranberries
1 cup sugar
1/2 cup orange juice
1/4 cup apricot marmalade
1/4 cup apricot liquor
1/2 cup of walnuts or pecans or slivered almonds
Assorted crackers, melba toast, or bread

1. Boil cranberries till soft.
2. Mix together cranberries with sugar, orange juice, apricot marmalade, and apricot liquor.
3. Chill the mixture in refrigerator for an hour.
4. Lay out cream cheese on dish and spread on crushed nuts.
5. Pour cranberry mixture over cream cheese crushed nuts and then top with nuts.
6. Serve with crackers or bread or melba toast, or whatever you wish!

Variation 1:
1. Mix everything together.

Variation 2:
1 (8 oz) package vegan cream cheese, softened
2 tablespoons concentrated orange juice, thawed
1 tablespoon vegan sugar
1/4 cup finely chopped dried cranberries
1 orange zest
1/8 teaspoon cinnamon
1/4 cup finely chopped walnuts or pecans or almonds
Cranberry slices and mint leaves for garnish

1. Mix cream cheese, juice concentrate, cinnamon, and sugar with an electric mixer on medium speed until smooth.
2. Add in the orange zest, pecans and cranberries.
3. Chill.
4. Garnish with mint leaves, cranberry slices or orange zest and enjoy!
