Bourbon Chicken
2 8 oz tofu, seitan, or tempeh, diced into bite-size pieces
2 tablespoons olive oil
2 cloves garlic, crushed
1/4 teaspoon ginger
4-6 tablespoons brown sugar, or to taste
2 tablespoons ketchup
1 tablespoon red rice vinegar or red wine vinegar or cider vinegar
1/2 cup water
2-5 tablespoons soy sauce
2-6 tablespoons good bourbon whiskey
1. Heat oil in a large skillet.
2. Add tofu, seitan, or tempeh pieces and cook until lightly browned.
3. Remove tofu, seitan, or tempeh.
4. Add remaining ingredients, heating over medium Heat until well mixed and dissolved.
5. Add tofu, seitan, or tempeh and bring to boil.
6. Reduce heat and simmer for 10-20 minutes.
