Vegan Feta Cheese

Vegan Feta Cheese
1/4 cup olive oil
1/4 cup water
1/2 cup red wine vinegar
2 teaspoons salt
1 tablespoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon pepper
1 lb firm tofu, herb flavored, cubed or crumbled

1. Place everything but the tofu in the bowl and whisk together.
2. Add tofu, stir, and let sit for at least an hour.

Vegan Feta Cheese 2
1 pound extra-firm tofu
2 tbsp water
4 tsp yellow miso paste
¼ cup red wine vinegar
1 tbsp lemon juice
1 tsp salt
2 tsp basil, dried
1 tsp oregano or majarom, dried
¼ tsp rosemary, dried
2 tbsp nutritional yeast

Break tofu apart into a few large pieces in a mixing bowl and set aside. Whisk all remaining ingredients, except nutritional yeast together. Pour over tofu and mix with your hands, crumbing the tofu into smaller pieces as you go. Set aside and let rest for 10 minutes. Sprinkle 1 tbsp of nutritional yeast over top and mix. Taste, adding more nutritional yeast if desired.

Vegan Feta Cheese 3
1 lb firm lowfat tofu; drained
2 c water
2 1/2 tb nutritional yeast
1/2 ts salt; or salt-free seasoning
1/4 ts onion powder
1/4 ts paprika
1/4 ts garlic powder
1 pn parsley; dill, thyme,
1/4 c red wine vinegar
1/4 c vegan chicken broth
2 tb tahini
2 tb fresh lemon juice
2 ts minced fresh dill; or 1 t
1 ts tamari
1 ts dried basil
1 ts dried oregano
1/2 ts garlic powder

Place the first set of ingredients in a saucepan. Bring to a boil. Reduce the heat and simmer over medium heat, uncovered, for 20 minutes, stirring occasionally. Drain and place in a bowl. Whisk together the second set of ingredients until well blended. Pour over the tofu and toss gently. Cover and chill several hours, stirring occasionally to ensure the tofu cubes are evenly coated by the marinade. Store in the fridge (it keeps for a week or more), and drain before using.

Vegan Buttermilk

Recipes:
Tofu Buttermilk
Main:
For 1 cup use add one or two tablespoon of white vinegar or lemon juice to a cup of plant milk to and mix well, and let stand for 10 minutes. Rice milk does not work as well because of the lower protein content.

Note:
If you are thinking about substituting buttermilk for regular milk in a recipe or a prepared mix, proceed carefully, because the extra acid in the buttermilk will throw off the chemistry of the baking soda or baking powder. For each cup of buttermilk you add to a recipe that you are converting, you need to reduce the baking powder and add in baking soda. If the recipe uses enough baking powder, reduce it by 2 teaspoons and add in 1/2 teaspoon of baking soda for each cup of buttermilk. If the recipe uses less than 2 tsp baking powder, then reduce it by 1 teaspoon and add in 1/4 teaspoon of baking soda for each cup of buttermilk.

Vegan Evaporated Milk/Condensed Milk

Vegan Evaporated Milk
Evaporated milk is just 2 servings of milk in 1 serving of liquid.
So to get evaporated milk use twice as much instant dry soy milk powder to one serving of milk, or take ready made soy milk (with only soy beans and water on the label) and use that in place of water for mixing one serving of of instant dry soy milk powder.

Veganized Thanksgiving Ham

  1. Veganized Honey-Glazed Ham
  2. For the glaze:
1/2 cup vegan honey, if using agave nectar, use only 1/4 cup.
    1/4 cup apple cider vinegar
1/4 cup coarsely chopped peeled fresh ginger
    1/4 cup Dijon mustard
    1/4 cup packed brown sugar
    1/4 cup whiskey
    zest of 1 orange
    1 stick cinnamon
    5 whole cloves
    1 star anise
    1 clove garlic, crushed

For the vegan ham and pineapple:
1 whole carrots, peeled and cut into large chunks
1 stalks celery, cut into large chunks
1/2 whole orange, cut into 2 wedges
1 smoked cured vegan ham, about 5 pounds, at room temperature
1 2 pound pineapple, peeled, quartered lengthwise, cored, cut into 1/2-inch-thick slices

Combine the vegan honey, vinegar, ginger, mustard, brown sugar, whiskey, orange zest, cinnamon stick, whole cloves, star anise and garlic in a medium saucepan. Bring to a simmer over medium-high heat, stirring to dissolve sugar. Remove from the heat and steep for 5 minutes. Strain through a fine-mesh sieve into a small bowl; discard the solids.

Meanwhile, preheat the oven to 350 degrees F. Place the carrots, celery, onion and orange wedges in the bottom of a roasting pan and set the ham on top of the cut vegetables.

Brush some of the glaze over the vegan ham to coat entirely and generously.

Bake vegan ham until cooked, about 30min-1hr. The glaze should be golden and caramelized and the vegan ham should be fully heated through.

Remove the roasting pan from the oven and allow the vegan ham to rest for 10 minutes. Transfer the vegan ham to a carving board. Strain any pan drippings into a small bowl and skim off any excess oil.

Preheat the broiler. Place the pineapple slices in a single layer on a large baking sheet. Brush some of the glaze over the pineapple. Broil until the pineapple is tender and golden brown, basting pineapple with juices, about 10 minutes.

Holding the vegan ham in place with a carving fork, cut the vegan ham into about 1/4-inch-thick slices and arrange on a platter.

Arrange the pineapple slices around the vegan ham. Serve with the reserved pan drippings and any remaining glaze and enjoy.
    Original recipe: here

  3. Veganized Honey Glazed Ham
  4. 1 (5 pound) ready-to-eat vegan ham
    1/4 cup whole cloves
    1/4 cup dark corn syrup
2 cups vegan honey, if using agave nectar, use only 1 1/4 cup.
    2/3 cup vegan butter

    1. Preheat oven to 325 degrees F (165 degrees C).
    2. Score vegan ham by lightly cutting diamond shapes into ham and insert cloves. Place vegan ham in foil lined pan.
    3. In the top half of a double boiler, heat the corn syrup, vegan honey and vegan butter. Keep glaze warm while baking vegan ham.
    4. Brush glaze over vegan ham, and bake for 45min-1 hour and 15 minutes in the preheated oven. Baste vegan ham every 10 to 15 minutes with the vegan honey glaze. During the last 4 to 5 minutes of baking, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving.
    Original recipe: here

  5. Veganized Maple and Brown Sugar Glazed Ham
1 fully cooked vegan ham, about 6 to 8 pounds
1/2 cup pure maple syrup
1/2 cup brown sugar
1/2 cup apple juice
1 heaping tablespoon brown or Dijon mustard
dash cinnamon and ginger or allspice, optional

Place vegan ham on rack in a foil-lined roasting pan; score vegan ham and stud with cloves, if desired. Cook at 325° for about 18 minutes per pound, until cooked. Combine glaze ingredients in saucepan; bring to a boil and boil for about 2 minutes (be careful not to let it boil over). About 20 minutes before the vegan ham is done, spoon about half of the glaze over top of vegan ham, then about 10 minutes before done, spread remaining glaze over ham.
Original recipe: here

NOTE: The vegan ham from makes 600g (1-1/3 pounds), so make adjustments accordingly. You can also buy vegan ham 2 lb. By May Wah, which is 2 lb.

Egg substitutes

In baking:

  • Egg substitute/replacer - such as Orgran's No Egg substitute mix or Ener-G Egg Replacer.
  • Flax seed - egg replacer: 2 Tablespoons flax seed powder + 3 Tablespoons water = 1 egg (let sit a few minutes before adding to baking)
  • Psyllium - egg replacer: 1 Tablespoon Psyllium seed husks + 2 Tablespoons water = 1 egg (the longer they sit in water the "eggier" they become)
  • Applesauce - egg replacer: 3 Tablespoons applesauce = 1 egg (when a fruit flavor is acceptable)
  • Banana - egg replacer: 1/2 banana blended or mashed well = 1 egg (when a fruit flavor is acceptable)
  • Tofu - 1/4 cup blended soft or silken tofu = 1 egg
  • Tahini - thicker when raw, more egg like when diluted with water and stirred vociferously
  • Whole peanut butter see Tahini
  • Eggless Binder Powder: In most cases, this mixture should be whisked with a water-based wet ingredient like plant milk prior to going into the main recipe. This is important so the Eggless Binder incorporates into the recipe mixture as much as possible. Dough made with Eggless Binder should not sit any longer than is absolutely necessary before going into the oven for baking. The recipe below is for a large batch that can be used for many recipes.
2 ½ cups arrowroot powder or tapioca starch
    ½ cup non-aluminum baking powder
1 Tablespoon guar gum powder or xanthan gum powder
Whisk together the arrowroot powder or tapioca starch, baking powder and guar gum powder or xanthan gum powder in a large mixing bowl. Transfer this mixture to a glass jar and shake vigorously so it's thoroughly mixed. Label the jar accordingly.

1 ½ Tablespoons of Eggless Binder whisked in 3 Tablespoons of soy milk equals 1 egg.[source]
  • For egg whites: 1 tablespoon of milled flax seed with 3 tablespoons of water for each egg white you need, mix well, let sit for 1 to 2 minute.

Baking without eggs, milk and buttah
Replacing Eggs

In cooking:
  • Tofu - can be used to make scrambled 'eggs', benedicts, omelets, boiled 'eggs', 'egg' drop soup, 'egg' salad, deviled 'eggs', poached 'eggs', etc when cooked accordingly.
  • Chickpeas - can be used to resemble scrambled 'eggs'.
  • Potatoes - can be used to resemble scrambled 'eggs' and such.
